LEMON RICE

Lemon rice is regular dish which you can see in any south Indian kitchen. Its very simple to make and healthy to eat. For every special occasions and festivals lemon rice plays a major role in south Indian houses. Its very special even at temples as they give it as Prasad. You can also prepare this simple dish at home with cooked rice or any left over rice and here comes the easy recipe.





CUSINE: South Indian
SERVES: 2-3
TIME: 30 Minutes

Ingredients:
  • Cooked rice - 2 cups
  • Mustard seed -1/2 tbsp
  • Urid dal -1/2 tbsp
  • Channa dal -1/2 tbsp
  • Roasted peanuts -1 tbsp
  • Curry leaves -1 handful
  • Sesame oil -2 tbsp
  • Turmeric powder -(1/2 -1) tbsp
  • Red chilly - 2 nos
  • Green chilly -1 nos ( slitted )
  • Hing - (2-3) pinches
  • Lemon juice - juice of 2 medium sized lemon
  • Salt as needed



METHOD:
  1. To a pan add sesame oil. Once it gets hot add mustard seed followed by urid dal, channa dal. Allow to fry till golden brown. Add roasted peanuts.
  2. Add hing curry leaves and then chillies. Do not allow to burn.
  3. Add turmeric powder and switch off stove. Then add lemon juice.
  4. Add cooked rice and give a fine stir then add salt to taste. Add fresh curry leaves to get good flavor.
Tasty and easy lemon rice is ready…. Goes great with potato fry, thovayal or sambar.
