INGREDIENTS:
TO GRIND :
- Fennel seeds - 1 tsp
- Cumin seeds - ½ tsp
- Anise - 1
- Cardamom - 4
- Cloves - 2
- Cinnamon - 1 small stick
- Green chili - 2(less or more as per the spice you need)
- Garlic - (9 -10) medium sized pods
- Ginger - ½ inch
TO TEMPER :
- Bay leaf - 1 big or 2 small
- Fennel seeds - ½ tsp
- Green chili -1 slit
- Onion - 1 big sliced
OTHERS :
- Basmati rice - 200gm (washed and soaked)
- Vegetables -1 cup (carrot , beans and potato…. You can also add peas or other veggies)
- Mint leaves - 1 handful
- Coriander leaves - ½ handful
- Refined oil + ghee - 5 tbsp (mix both as per your taste)
- Salt to taste
- Water - 450 ml
- Curd - 2 tbsp
METHOD:
- Grind the ingredients in the "To Grind" list and keep aside.
- To a cooker or thick kadai add ghee, oil and heat it. Then add bay leaf and cumin seeds.
- Add onion, green chilli and sauté well.
- Add the ground paste from step 1 and sauté until raw smell fades.
- Add veggies, mint, coriander leaves and sauté well.
- Add curd and sauté well.
- Add drained rice, salt and sauté well.
- Add water and let it boil.
- Close the lid and put in sim for 20-25 mins.
- Turn off stove and let it stay in stove for 5 min. Briyani is Ready!!!
