PINNI’S VEG BRIYANI

Hei guys… today I am here with the recipe of pinni’s vegetable briyani. Confused with the heading?? 😜Well it’s the recipe of yummy yummy vegetable briyani which is usually prepared by my pinni (maasi / chithi) and it is my favourite one. This recipe is done with freshly ground masala, aromatic tempering of spices and yummy basmati rice which fills the house with its aroma and tempts you to taste it as soon as its cooked 😉😉 Let’s get into the recipe now….

SERVES : 2-3 


TIME : 75 Mins





INGREDIENTS:

TO GRIND :

  • Fennel seeds - 1 tsp
  • Cumin seeds - ½ tsp
  • Anise - 1
  • Cardamom - 4
  • Cloves - 2
  • Cinnamon - 1 small stick
  • Green chili - 2(less or more as per the spice you need)
  • Garlic - (9 -10) medium sized pods
  • Ginger - ½ inch

TO TEMPER :

  • Bay leaf - 1 big or 2 small
  • Fennel seeds - ½ tsp
  • Green chili -1 slit
  • Onion - 1 big sliced

OTHERS :

  • Basmati rice - 200gm (washed and soaked)
  • Vegetables -1 cup (carrot , beans and potato…. You can also add peas or other veggies)
  • Mint leaves - 1 handful
  • Coriander leaves - ½ handful
  • Refined oil + ghee - 5 tbsp (mix both as per your taste)
  • Salt to taste
  • Water - 450 ml
  • Curd - 2 tbsp



METHOD:
  1.  Grind the ingredients in the "To Grind" list and keep aside.
  2.  To a cooker or thick kadai add ghee, oil and heat it. Then add bay leaf and cumin seeds.
  3.  Add onion, green chilli and sauté well.
  4.  Add the ground paste from step 1 and sauté until raw smell fades.
  5.  Add veggies, mint, coriander leaves and sauté well.
  6.  Add curd and sauté well.
  7.  Add drained rice, salt and sauté well.
  8.  Add water and let it boil.
  9.  Close the lid and put in sim for 20-25 mins.
  10.  Turn off stove and let it stay in stove for 5 min. Briyani is Ready!!!
