COCONUT MILK RICE

Coconut milk rice is my favorite dish which is easy to cook and tasty to eat. The reason why I love this dish is , it’s full of coconut flavor that tastes very unique while eating. Give it a try with the following recipe and share your reviews.

SERVES: 2-3
TIME: 30 Minutes

Ingredients:
  • Basmati rice - 1 cup
  • Coconut Milk -2 cups (1 cup milk + 1 cup water if u don't want it to be more creamy)
  • Big Onion - 2 (Sliced)
  • Green Chilly - 3 (Vertically Silted)
  • Bay Leaf - 2
  • fennel seeds - 1 tsp
  • Cardamom - 3
  • Cloves - 2
  • Cinnamon - 1
  • Star anise - 1
  • Black stone flower - 1 
  • Mint - handful
  • Ginger Garlic paste - 1 tsp
  • Ghee as needed
  • Salt as needed

METHOD:
1. In a cooker add ghee followed by bay leaf, fennel seeds, star anise, cloves, cardamom, cinnamon and black stone flower.
2. Add chopped onions and green chilies and keep frying until raw smell fades.
3. Add ginger garlic paste and mint leaves.
4. Add soaked basmati rice and fry a little.
5. Add coconut milk and let it come to a boil.
6. Add required amount of salt.
7. Give a fine stir and close the cooker without gasket and whistle.
8. Let it be cooked for 30-40 minutes, in slow flame. Check in between after 30 minutes to avoid over cooking.
9. Switch off the stove and garnish with mint leaves before serving.


Now the delicious & aromatic coconut milk rice is ready to be tasted!! It goes best with a spicy gravy/sauce.
